Alright, enough, let's get on with Spring!

It is March 24th in Connecticut and there is still a foot of snow on my gardens. I am usually up to my ears in garden editing by now, awaiting the flowering ephemeral plants and anxiously planting early vegetables. Not this year but as soon as that snow is gone, I will be searching for early plants to forage including Dandelion, Nettle and Violet. The internet is now full of wonderful recipes for foraged food and I will link from here when I can. In the mean time, as soon as the first Dandelions appear, I will be getting garlic, onion and the young leaves in a saute with ghee or coconut oil. This makes my mouth water just to thinking about the succulent, bitter green. Spring cleansing never tasted so good. I experiment with various spice blends to change the flavor of the dish.
